Ground Turkey with Mushrooms and Parmesan Smashed Potatoes
Turkey is a great protein that can be cooked in various ways, and this method is using it as ground turkey. To enhance the dish, we made a light mushroom mixture that blends in with the turkey. As a side dish, we made these buttery and lightly smashed potatoes topped with parmesan cheese.
Ingredients (turkey mixture):
- Ground turkey
- Salt
- Pepper
- Olive oil
- Mushrooms
- Italian seasoning
- Fresh ginger
- Fresh garlic
- Shallots
Ingredients (parmesan smashed potatoes):
- Small Yukon gold potatoes
- Salt
- Olive oil
- Parmesan cheese
Instructions (turkey mixture):
- Start off by preparing your mushroom mixture
- Wash your mushrooms under cold water and slice
- Dice your shallots, garlic, and ginger
- Get your large pan nice and hot with a drizzle of olive oil
- Once your pan gets hot, drop in your shallots, garlic, and ginger and top with a pinch of salt
- Brown your ingredients and then include your mushrooms
- Add a pinch of salt and your Italian seasoning to the mixture and cook until mushrooms and tender and soft
- Next, get your ground turkey, and drop into the pan and cook until no pink
- Remember to season your meat as it cooks, so feel free to add more salt or pepper before serving
Instructions (parmesan smashed potatoes:
- Get a large pot on the stop with cold water and bring to boil
- Add a pinch of salt and a drizzle of olive oil to the boiling water
- Add your potatoes to the boiling water and cook for about 10 minutes
- Pre-heat your oven to 350 degrees Fahrenheit
- Grab a baking pan and line with a baking sheet to prevent sticking
- Transfer the potatoes to the baking pan and lightly smash with a fork
- Drizzle olive oil on the potatoes, a pinch of salt, and cover with parmesan cheese
- Put your smashed potatoes in the oven and bake for about 15 minutes
- Enjoy!
This recipe does take a bit longer than others, but the result is amazing! Remember, prep your ingredients ahead of time to reduce your cooking time.
