Rice Salad with Sun-dried Tomatoes & Kalamata Olives
This rice salad recipe is sure to bring some freshness and lift to your diet - A perfect side dish or even a simple main for a quick lunch or dinner. Rice is an everyday side that you can spice up to pair with any protein and can be prepared hot with some butter. To enhance your rice, toss in some different flavours to excite your spread.
Ingredients:
- White rice
- Kalamata olives
- Green onion
- Salt
- Pepper
- Olive oil
- Sun-dried tomatoes
Instructions:
- Grab a small pot and boil water for the white rice
- While you wait for the water to boil, start prepping your additions
- Slice a couple green onion stalks, slice and pit a jar of kalamata olives (or grab the pitted olives if easier) and slice a jar of sun-dried tomatoes
- When your rice is cooked, place in a large mixing bowl
- Drizzle some olive oil in the rice, along with a pinch of salt and pepper
- Add in your green onion, kalamata olives, and sun-dried tomatoes
- Mix well and serve hot or cold
