Crispy Seasoned Chicken, Cherry Tomato and Black Bean Salad, and Butter Parmesan Rice
Creating multiple dishes at the same time is fun, never take it as stressful or work. Cooking is fun, and we need have this mindset. This spread is quick to make and involves minimal prep work. Our seasoned chicken, paired with a fresh tomato and black bean salad, and an easy butter parmesan rice.
Ingredients (chicken mix):
- Chicken breasts (or you can use dark meat)
- Salt
- Pepper
- Olive oil
- Paprika
- Cumin
- Chili powder
Ingredients (cherry tomato and black bean salad):
- Cherry tomatoes
- Black beans
- Salt
- Pepper
- Olive oil
- Italian seasoning
Ingredients (butter parmesan rice):
- White rice
- Butter
- Parmesan cheese
- Pepper
Instructions:
- Slice your raw chicken breast in strips and place in a mixing bowl
- Sprinkle salt, pepper, cumin, paprika, and chili powder on the chicken and mix well
- Get a large pan hot and drizzle olive oil, place the chicken in the pan
- While your chicken is cooking, get the salad going
- Slice cherry tomatoes in halves and place in a small bowl
- Use one can of black beans, rinsed, and place in the small bowl
- Drizzle with olive oil and season with pepper, salt, and Italian seasoning
- Place the salad in the fridge to marinade
- For the rice, get a medium pot and boil your water
- Cook the rice until tender and water has absorbed
- Blend in three knobs of butter and parmesan cheese until creamy
- Enjoy!
