Rapini (Broccoli Rabe) Side Dish Topped with Garlic and Parmesan Cheese


Welcome to part two of our mini rapini series. In our first rapini blog post, we welcomed the addition of rapini as a side dish. Now, we are going to add onto it and include some parmesan cheese as a topping. We love using large pots when cooking rapini as it gives more room for a rolling boil.

Ingredients:
  • Fresh rapini (also known as broccoli rabe)
  • Garlic cloves
  • Salt
  • Pepper
  • Olive oil
  • Parmesan cheese
Instructions:
  1. Bring cold water to a rolling boil
  2. Place your fresh rapini (broccoli rabe) into the hot boiling water
  3. Cook the rapini until tender, not too soft (if it’s too soft, that means it's overcooked)
  4. As the rapini is cooking, grab a small pot and pour in half a cup of olive oil
  5. Grab your garlic gloves and drop 5-6 cloves into the olive oil and bring to a simmer
  6. Once your garlic cloves brown, turn off the heat
Instructions (Plating):
  1. To plate, place your cooked rapini onto your dish
  2. Drizzle the rapini with the garlic olive oil
  3. Next, place the cooked garlic gloves on top of the vegetable
  4. Sprinkle with salt and pepper
  5. To finish, add your parmesan cheese to top off the rapini
