Quick Chicken Pho Topped with Fresh Green Onion and Cilantro
Pho is a signature Vietnamese dish, which consists of a savoury broth, fresh vegetables, and your choice of protein (meat or no meat). In this recipe, we decided to make a quick DIY version of Pho for a weekday meal. We always use the Vermicelli rice noodles when cooking up Pho.
Ingredients:
- Vermicelli rice noodles
- Minced garlic
- Salt
- Pepper
- Olive oil
- Chicken breasts
- Chicken broth
- Green onion
- Cilantro
- Fennel cloves
Instructions (Chicken):
- Bring cold water to a boil
- Place your raw chicken breasts in the hot boiling water and cook until no pink is present
- Remove the cooked chicken breasts and pull apart with a fork
- Place the cooked pulled chicken to the side
Instructions (Broth and Noodles):
- To make the quick broth, start with a large pot and get it nice and hot
- Slice fresh green onion (two stalks) in half
- Drizzle the bottom of the hot pot with olive oil
- Next, place four fennel cloves in the pot, along with your minced garlic (about two cloves)
- Cook off the flavours of the above ingredients for roughly two to three minutes
- Next, add in your chicken broth (about 1-2 cartons, depending on how much broth you want to make)
- Cover the pot and bring the temperature down to a gentle boil
- In the meantime, for the noodles, follow the instructions on the package to prepare
- The general instructions will include boiling a couple of cups of hot water and placing your noodles in the hot water for roughly five minutes or until tender
- Enjoy!
To plate your Pho, feel free to experiment and top it off with fresh cilantro and green onion for a burst of colour and freshness! We love to see the green and the red colours pop.
