Light Tomato and Cucumber Salad
This recipe is great when you are in the mood for a refreshing and light salad, but without the lettuce. This pairs well with any entree, but you can also have it as your main if you wish. Not only does it taste light, but is so bright & vibrant on the eyes.
Ingredients:
- Tomatoes (can use Roma or cherry tomatoes)
- Mini cucumbers (can also use one large cucumber)
- Salt
- Pepper
- Olive oil
- Dried basil leaves
- Dried oregano
- Dried rosemary
Instructions:
- Slice your fresh tomatoes in quarters (depending on the size of your tomatoes)
- Slice your mini cucumbers in quarters as well (we left the skin on, but remember to wash thoroughly)
- Next, toss your tomatoes and cucumbers in a bowl or tray
- Drizzle your vegetables in olive oil
- Sprinkle pinches of salt and pepper onto the mixture
- The secret seasoning, is to include dried basil leaves, oregano, and rosemary
- Mix your salad until your tomatoes and cucumbers are thoroughly coated with the olive oil and seasoning
- Enjoy!
