Homemade Guacamole and Croutons
Working at home and in need of a snack? Or doing chores on the weekend in need of a pick me up? This is the perfect recipe for you. A healthy snack that will satisfy your belly. Guacamole and homemade croutons will sure get you going.

Ingredients:
- Avocado (we used 1 large avocado)
- Salt and pepper
- Fresh lemon juice
- Fresh garlic clove
- Touch of olive oil
- Brioche bread
Instructions:
- Let's start first with the croutons
- Slice your brioche bread in small cubes or rectangles
- Get a medium size pan hot
- Add a touch of olive oil to the hot pan and dump your bread in
- Add a pinch of salt and pepper to the bread while it is toasting in the pan
- Ensure both sides get a good browned crisp
- Take out and place a bowl
- Next, it is guacamole time
- Grab your large avocado, and to open, with a small knife, gently cut in the middle horizontally
- Twist the two sides until they separate and use your knife to pierce the seed in order to remove
- Use a small spoon to scoop the avocado and place in a food processor
- Add the lemon juice of one small lemon
- Add a diced garlic clove
- Add salt and pepper
- Add two tablespoons of olive oil and blend
- Remove from the food processor and enjoy!
Another great tip with guacamole is to top it off with homemade tomato salsa. It definitely adds another dimension of freshness to the dish.
