Light Summer Tomato Sauce for Pasta

 

Tomato sauce can be so versatile with various ingredients and preparation methods. With this recipe, instead of cooking the sauce on the stove, we experimented, and prepared in the oven. A great quick recipe if you are in a rush, or if you feel like spicing it up.

Ingredients: 
  • Feta cheese
  • Cherry tomatoes
  • Scallions
  • Fresh basil
  • Fresh garlic cloves
  • Pepper
  • Olive oil
  • Italian seasoning
Instructions:
  1. Grab a large deep pan for your sauce and set the oven at 350 Degrees Fahrenheit 
  2. Wash your cherry tomatoes and place in the pan whole (do not slice your tomatoes)
  3. Grab your fresh basil, and roughly slice and place in the pan
  4. Next, take your fresh garlic gloves and lightly crush them, place in the pan
  5. Grab your scallions and slice in half, place in the pan
  6. Lightly season the tomatoes, scallions, and basil with pepper and Italian seasoning (no salt added)
  7. Top with a fresh block of feta cheese and drizzle your pan with olive oil
  8. Place in the oven for about 20 minutes, until tomatoes are soft
  9. Lightly mash the tomatoes with the feta and scallions to form a sauce
  10. Enjoy with your favourite pasta!
