Grilled Flank Steak with Summer Corn Salsa

Summer is in full swing and this recipe resembles the freshness that summer brings! Grilled steak, either on the barbecue or in the pan, is perfect for a weekday or weekend meal. In this recipe, we use flank steak, a quick cook and lean cut of meat. To enhance the dish, we topped the steak with a summer corn salsa which also adds a splash of colour. 

Enjoy this dish with a side of rice or potato salad, or if you want a less heavy meal, substitute the carbs for a nice veggie!

Ingredients (Flank Steak):
  • Flank steak
  • Olive oil
  • Salt
  • Pepper
  • Cumin
  • Paprika
  • Garlic powder
  • Onion powder
Ingredients (Summer Corn Salsa):
  • Corn kernels
  • Cherry tomatoes
  • Salt
  • Pepper
  • Olive oil
  • Avocado
  • Parsley
  • Onion (white or red works)
Instructions:
  1. Marinate the flank steak in the seasoning (cumin, salt, pepper, olive oil, paprika, garlic powder, onion powder)
  2. Let the flank steak rest for about 20 minutes in the marinade
  3. While the flank steak marinates, start to put together your summer corn salsa
  4. In a bowl, combine one can of corn kernels, a handful of cherry tomatoes, diced fresh avocado, chopped parsley, and diced onion
  5. Mix the ingredients together and include a pinch of salt, pepper, and drizzle of olive oil
  6. Let the summer corn salsa marinate in the fridge once mixed together
  7. Steak time! Cool the flank steak in the pan on the stovetop
  8. Get the pan hot and then drizzle some olive oil once heated
  9. Lay the flank steak in the pan and sear both sides
  10. Cook the flank steak to your liking (temperature wise), we cooked it to a medium well
  11. Once cooked, let the flank steak rest on a flat plate (resting is key!)
  12. Grab the summer corn salsa from the fridge and top the flank steak with the mixture
  13. Slice and serve!
