Blackened Cajun Chicken with Scalloped Potatoes and Asparagus
This dish is sure to make you feel at home after a busy summer day. We paired our spiced chicken with cheesy scalloped potatoes and a side of fresh asparagus. This is the perfect budget-friendly meal that also tastes amazing.
Ingredients:
- Chicken breasts
- Salt
- Pepper
- Olive oil
- Cumin
- Chili powder
- Paprika
- Scalloped potatoes (we used an easy Betty Crocker mix)
- Asparagus
Instructions:
- Start with getting your chicken breasts nicely marinated with your spices
- In a medium sized bowl, mix your spices (paprika, cumin, chili powder, salt, pepper) with the chicken breasts and drizzle some olive oil
- Let your chicken sit for about 20 minutes to let the spices do their magic
- While your chicken breasts are marinating, grab a small pot and boil cold water for your asparagus
- When the water begins to boil, place the asparagus in the pot to a roiling boil with a pinch of salt (cook until tender)
- In another small pot, follow the instructions on the Betty Crocker mix to make your easy scalloped potatoes
- Your chicken breasts are ready for cooking now!
- Grab a large pan and get it nice and hot
- Once hot, drizzle some olive oil in the pan, and place the chicken breasts slowly (sear both sides for colour)
- Once cooked, plate your chicken, asparagus, and scalloped potatoes and enjoy!
