Healthy Garlic Rapini Side Dish
Vegetables are the perfect compliment to any main dish, but how do we go the extra mile to enhance the meal? Rapini, also known as Broccoli Rabe, is a veggie you can find in your local supermarket that is a perfect choice to go with your protein or main dish.
Ingredients:
- Fresh rapini (also known as broccoli rabe)
- Garlic cloves
- Salt
- Pepper
- Olive oil
Instructions:
- Bring cold water to a rolling boil
- Place your fresh rapini (broccoli rabe) into the hot boiling water
- Cook the rapini (broccoli rabe) until tender, not too soft (too soft means it's overcooked)
- As the rapini is cooking (broccoli rabe), grab a small pot and pour in half a cup of olive oil
- Grab your garlic gloves and drop 5-6 cloves into the olive oil and bring to a simmer
- Once your garlic cloves brown, turn off the heat
Instructions (Plating):
- To plate, place your cooked rapini (broccoli rabe) onto your dish
- Drizzle the rapini (broccoli rabe) with the garlic olive oil
- Next, place the cooked garlic gloves on top of the vegetable
- To finish it off, sprinkle with salt and pepper
